Savory. Cheesy. A Little Sweet. Totally Worth Sharing.

The Recipe (Makes 24 Mini Bites)

Prep: 20 minutes with prepared cornbread  |  Bake: 18–22 minutes  |  Total: About 45–50 minutes

Ingredients

For the Stuffing Bites

4 cups crumbled, slightly dried cornbread (homemade or store-bought)
½ lb mild breakfast sausage
1 cup shredded sharp cheddar cheese
½ cup finely diced onion
⅓ cup finely diced celery
2 tbsp butter
2 tbsp pure maple syrup
1 tsp chopped fresh sage (or ½ tsp dried)
½ tsp fresh thyme leaves
2 large eggs, lightly beaten
½ cup chicken broth, plus more as needed
¼ tsp black pepper
Salt to taste

For the Cranberry-Orange Dipping Sauce

1 cup fresh or frozen cranberries
⅓ cup orange juice
¼ cup pure maple syrup
1 tsp orange zest
Pinch of cinnamon
1–2 tbsp water, as needed

Directions

For the Stuffing Bites

  1. Heat Things Up: Preheat oven to 375°F. Generously grease a 24-cup mini muffin tin.
  2. Bring on the Sausage: Brown sausage in a skillet over medium heat, breaking it into small crumbles, about 6–8 minutes. Set aside.
  3. Get Those Veggies Going: Melt butter in the same skillet. Add onion and celery and sauté for 5–6 minutes until softened. Stir in sage, thyme, and black pepper.
  4. Mix Up Some Magic: In a large bowl, combine crumbled cornbread, cooked sausage, sautéed vegetables, cheddar, and maple syrup.
  5. Hold It Together: Whisk eggs with ½ cup chicken broth. Gently fold into the stuffing mixture. Add a little more broth if needed, just until the mixture holds together when pressed.
  6. Make It Mini: Spoon mixture into the prepared muffin tin, pressing firmly into each cup.
  7. Bake Until Golden: Bake for 18–22 minutes until crispy around the edges, golden on top, and the centers reach 165°F.
  8. Dip & Dig In: Let cool for 5–10 minutes before removing from the tin. Serve warm with cranberry-orange dipping sauce.

For the Cranberry-Orange Dipping Sauce

  1. Get Saucy: Combine cranberries, orange juice, maple syrup, orange zest, and cinnamon in a small saucepan.
  2. Let It Bubble: Simmer over medium heat for 10–12 minutes, stirring occasionally, until cranberries burst and the sauce thickens.
  3. Smooth Things Out: Mash with a fork or blend until smooth. Add a splash of water if needed for dipping.
  4. The Finishing Touch: Serve alongside warm stuffing bites. Double-dipping decisions are between you and your family.

Hen House Tips

Day-old cornbread is your friend. Slightly dried cornbread holds together better and keeps the bites from getting soggy
Go sharp on the cheddar. It adds a delicious savory kick that balances the maple
Press those bites firmly. This helps them hold their shape when removed from the muffin tin
Make ahead. Prepare the mixture the day before, refrigerate, and bake fresh when guests arrive
Keep the cranberry sauce handy. It's also delicious with turkey, roasted vegetables, and warm dinner rolls

The Holiday Shortcut? Stove Top!

Love homemade flavor but short on time?

Save approximately 40–45 minutes by swapping homemade cornbread for a 6-oz box of Stove Top Cornbread or Savory Herbs Stuffing Mix.

Use the dry stuffing mix in place of the cornbread. Start with ½ cup chicken broth, adding a little more only if needed. Reduce the added sage, since the stuffing mix is already seasoned.

Keep the sausage, cheddar, maple syrup, vegetables, and eggs.

No baking cornbread. No cooling. No crumbling.

A little shortcut. A whole lot of Thanksgiving deliciousness.
